Fresh Kielbasa, Swiss Chard and Apple Saute

1 onion         

6 small green & red peppers   

6 small/medium tomatoes      

Bunch Swiss chard

2 small apples 

3-4 tbsp olive oil

1 Browning Homestead Fresh Kielbasa (or other fresh BH Sausage)

Preparation: Chop 1 red onion, 6 small green and red peppers, a bunch of Swiss chard stems (save the leaves for the end) and about 6 small to medium tomatoes. Peel, core and slice into chunks two small apples.  Slice 1 BH Kielbasa (approx 1 lb) in 1.5 inch pieces.  Cook: Heat 3 - 4 tablespoons of olive oil in large skillet. Sauté onion, peppers, Swiss chard stem pieces in olive oil for about 5 minutes on medium high, stirring to turn and sauté evenly.  Push vegetables to the outer edges of the pan, add kielbasa to the middle, and cook for 5 minutes, stirring to lightly brown kielbasa (keep an eye on the vegetables to keep from sticking, but don't mix in with meat until each piece of kielbasa is lightly browned). Turn heat to medium, mix the kielbasa and vegetables together, and cover and cook on medium for about 20 minutes.  Stir and turn the kielbasa and vegetables every so often to cook evenly.  Stir in tomatoes, cover and cook another 5-10 minutes, just until tomatoes are soft.  Add Swiss chard leaves, torn, and the apple chunks.    Stir to mix ingredients in pan, cover and lower heat.  Let simmer for 10 minutes. Swiss chard leaves will be soft and apples will be caramel colored, soft but not mushy.  Serve over rice.
