Blueberry Coffee Cake
1½ cup flour Topping:
¾ cup sugar 1/3 cup flour
2 ½ tsp baking powder ½ cup brown sugar, firmly packed
1 tsp salt ½ tsp cinnamon
¼ cup veg. oil ¼ firm butter (½ stick)
¾ cup milk ½ cup fresh blueberries
1 egg
1 cup fresh blueberries
§ In mixing bowl, blend together first 8 ingredients. Beat for 30 seconds and spread into greased round 9 x 1.5” pan or 8x8x2” pan.
§ Combine first 4 “topping” ingredients and sprinkle over batter. Top with the remaining ½ cup blueberries.
§ Bake at 375° for 25-30 minutes, or until center comes out clean on toothpick.
Serve warm with butter or honey.
